Molloy’s Bakery is a family run bakery and delicatessen, located in Roscommon, Ireland. The company’s ethos is to run a profitable business in which sustainability plays a key role, adequately providing for the present while not compromising the ability of future generations.
For over 3 years, Molloy’s Bakery has been a verified member of Origin Green. The company has developed a sustainability plan in accordance with the Origin Green Sustainability Charter. Declan Molloy, 3rd generation baker and owner of Molloy’s believes that the quality and provenance of its ingredients are key to ensuring customers are provided with the highest possible standard of product. To that effect, Declan and the team at the bakery have selected the following two targets as part of their sustainability plan under the heading of raw material sourcing: Source raw material from suppliers within Ireland; and to develop sustainability initiatives with suppliers.
The company is making measurable efforts in their energy and water targets as part of their sustainability targets under the heading of manufacturing processes. Examples include the removal of a second water meter to allow for streamlined use and conservation; replacing fluorescent lighting to higher efficient LED lighting, installing a new more efficient and higher spec insulation oven; and replacing the delivery fleet with more efficient vehicles. Staff training has also progressed in HACCP development, implementation and a verification course.
As per the company’s social sustainability commitments, the company actively engages with local community groups such as Meals on Wheels. Molloy’s Bakery also provides bread free of charge to the visitors section of Castlerea prison, as well as promoting home baking with local children by sponsoring the junior baker of the year award at Roscommon Agricultural Show.
