Honest Bakery

 

Honest Bakery is a dedicated gluten-free bakery and sister company of Molloy’s Bakery; both are located in Abbeytown, Co. Roscommon. Mark and Jackie-Ann have taken over the running of Honest, which is located approximately one mile away Molloy’s Bakery which is run by their parents, Declan and Mary T. Molloy. Having two separately located premises in the town is essential to ensure no cross contamination occurs in the gluten-free bakery.

The company’s ethos is to run a profitable business where sustainability plays a key role; providing for the present but not compromising future generations. Despite commercial scale, everything is hand-made in small batches using only the finest ingredients. Building on the success of its mini-cakes, Honest has expanded its product range to include gluten-free biscuits, cantucci, fresh bread, tarts, and rocky road.

Mark Molly, a fourth generation baker, feels that bringing Origin Green into the Honest business as early as they did helped them become more efficient, streamline processes, and plan their operations better. Mark believes that this future-proofed his business and helped it grow in a more sustainable way.

 

Sustainability Plan

As a verified member of Origin Green, the Molloy family have developed a sustainability plan for both bakeries that follow the Origin Green Sustainability Charter. Key targets fall under the three pillars of the Charter; raw materials sourcing, manufacturing processes, and social sustainability.

Raw Materials Sourcing

  • An initiative put in place to source raw materials from suppliers within Ireland wherever possible.
  • Development of sustainability initiatives with suppliers which includes the engaging suppliers with a similar sustainability objective to reduce raw materials and packaging.

 

Manufacturing Processes

  • Removal of a second water meter to allow for streamlined use and conservation.
  • Replacing fluorescent lighting to higher efficient LED lighting.
  • Installation of highly efficient ovens to reduce energy consumption.

 

Social Sustainability

  • Active engagement with local community groups such as Meals on Wheels.
  • Provision of free bread to the visitor’s section of Castlerea prison.
  • Promotion of home baking through the sponsorship of the junior baker of the year award at Roscommon Agricultural Show.
