Honest Bakery is a dedicated gluten free bakery and sister company of Molloy’s Bakery located in Abbeytown, Co. Roscommon.
The company’s ethos is to run a profitable business in which sustainability plays a key role, adequately providing for the present while not compromising the ability of future generations.
Acquiring the Honest Bakery in 2011, has aided the Molloy family to expand their business and increase local employment. Declan and Mary T. Molloy continue to run Molloy’s, a traditional artisan bakery and delicatessen while their children Mark and Jackie-Ann have taken over the running of Honest, which is located approximately one mile away. Having two separately located premises in the town is essential to ensure no cross contamination occurs in the gluten free bakery.
Despite commercial scale today, everything is hand-made in small batches using only the finest quality ingredients. Building on the success of the mini-cakes, Honest has expanded its product range to now include gluten free biscuits, cantucci, fresh bread, tarts, and rocky road.
As a verified member of Origin Green, the Molloy family have developed a sustainability plan in accordance with the Origin Green Sustainability Charter, for both bakeries.
Declan believes that the quality and provenance of their ingredients are key to ensuring customers are provided with the highest possible standard of product. His son and fourth generation baker Mark feels that by bringing Origin Green into the Honest business as early as they did helped them become more efficient, streamline processes and plan their operations better. Mark believes that this is future proofing his business and growing it in a more sustainable way.
