Clonakilty Distillery founders, the Scully family, have farmed their coastal land for eight successive generations. A commitment to both heritage and innovation has led to the revival of ancient malting barley varieties. Using these barley varities the Scully family create a range of craft whiskies and gin that honors this unique inheritance to manufacture and supply them to the domestic and international markets. Clonakilty Distillery's whiskies and gin's have no added sugar, fat or salt and are gluten free.
Injecting vibrant new life into the heart of the town, the Distillery is set to become a landmark building on the Wild Atlantic Way route to Clonakilty as they open up a "best in class" Distillery Visitor Experience in the January of 2018
Clonakilty Distillery are committed to reducing their energy output by 8% over their 4 year plan, a reduction of 2% year on year. They also aim to increase the use of natural untreated spring water by 20% of their total water usage by 2022.
Targets are also in place to reduce waste to landfill from the distillery by diverting process co-products to livestock feed for farmers in their locality by the end of 2019.
Rock samphire is the foremost botanical used in Clonakilty Distillery's signature Minke Gin, because of this they are committed to study the growing habits and ensure its sustainability and viability. Implementation of this measurement plan will take place in 1 site by the end of 2019 and further progress to a total of 5 sites in 2022.
Clonakilty Distillery only use raw ingredients that are grown locally on their own farm or within Ireland for their whiskey and gin range.
