Glendalough Distillery was started by a few of friends from Wicklow and Dublin. They convinced eachother to leave the safety of their day jobs in the city, and head for the Wicklow Mountains to do something more meaningful - much like the man on their bottle, St Kevin. With a portfolio of different varieties of whiskey, gin, and poitín, some made from fresh wild ingredients, they have a craft spirit to suit every taste.

Zero packaging waste for all foraged materials, locally grown and produced baskets are reused each year for harvest. Zero carbon footprint of foraged foods compared to cultivated produce, as no human input is required to make wild plants grow.
Develop best practice for developing tourism for local area and education plan for visitors to the distillery - foraging walks have been organised in Glendalough with a local botanist.
